4 Jan 2010Every legendary business has a signature item. McDonald’s is known for the Big Mac. For Thomas Keller, it’s the famous “Oysters and Pearls” entree featuring pearl tapioca custard, oysters and a sizeable amount of caviar.
A “signature item” is almost like a personal signature, something that can only be imitated, never copied. It’s the mainstay of the company, a recognized necessity that frequent patrons can depend on.
At A Fare Extraordinaire, the “signature item” is definitely the sweet potato chip. Each sweet potato is thinly sliced, fried and dusted with confectioner’s sugar and salt. This delicious item is at home on lunch, dinner and dessert menus alike. Our favorite way to use the sweet potato chip is as a guest giveaway… simply wrap in a cellophane bag, tie with a decorative ribbon or raffia, and make it your own with a custom printed tag.
